Hearty Beef Chili

This chili is full of root veggies, hearty meats and warming spices. It not only supports steady hormones but also nourishes the adrenals and contributes to balanced blood sugar and a healthy gut lining. It’s perfect for the shorter days and colder temps.

The ‘why’ behind the ingredients:

  • Ancestral blend beef: This beef blend comes from regenerative farming practices and includes ground beef, beef liver and beef heart. R E C I P E

Ingredients:

  • 1 pound ground beef or sub for ancestral blend beef from Force of Nature

  • 2 Tbsp olive oil

  • 1 yellow or red onion

  • 1 sweet potato

  • 1 red pepper

  • 2 stalks celery

  • 2 carrots

  • 3 gloves garlic

  • 2 cups beef bone broth

  • 1 can black beans (drained and rinsed)

  • 1 can kidney or pinto beans (drained and rinsed)

  • 1 (28 oz) can fire roasted diced tomatoes

  • 1 Tbsp tomato paste

  • 2 Tbsp chili powder

  • 1 Tbsp cumin

  • 2 tsp smoked paprika

  • 2 tsp oregano

  • 1 tsp cayenne

  • Salt and pepper to taste

  • Optional if you like more spice: 2 chiles in adobo sauce plus 1 Tbsp of the sauce

Instructions:

  • Chop veggies (onion, celery, carrots, peppers, sweet potatoes) into small chunks

  • Heat oil in dutch oven or large pot

  • Add the veggies to the pot and cook until the onion is translucent, season with salt and pepper

  • Add the beef to the pot and brown

  • Add the spices (paprika, cumin, garlic, oregano and chili powder) and tomato paste and cook until fragrant

  • Add the broth, beans and tomatoes and stir to combine

  • Increase the heat to bring the chili to a boil, reduce heat to medium, and let simmer uncovered for 30 minutes.
