Chia Seed Pudding
Chia seeds are an excellent source of omega-3’s, antioxidants and fiber. They also contain all nine essential amino acids (rare for vegetarian sources of protein) so are a great way to get more protein in your diet. Read more about these little gems here.
When combined with coconut milk and allowed to soak over night or at least for 2 hours, the little seeds swell up into a gel-like substance which makes the pudding a really filling breakfast option.
Additionally, one key component of maintaining healthy hormones is daily bowel movements. This is how our body gets rid of processed, broken down hormones which are toxic and inflammatory if allowed to hang around. Chia seeds provide fiber that helps support our liver and intestines in doing just that.
After combining your milk of choice, chia seeds and sweetener (maple syrup, honey or other) and letting them soak overnight (or for at least 2 hours) dress that bad boy up with all your favorite toppings and enjoy!

Ingredients:
1 cup milk alternative (coconut, oat, almond, cashew etc)
1/4 cup chia seeds
1 tablespoon sweetener of choice (honey, maple syrup etc)
Optional toppings :
Coconut flakes
Granola
Berries or other fruit
Nuts/seeds
Anything else your heart desires
Directions:
Combine chia seeds, milk and sweetener in a jar, shake/stir well and allow to sit in refrigerator overnight or for at least 2 hrs.
Remove from fridge, pour into bowl and top with your favorite toppings
Enjoy!
